- 125g soft unsalted butter
- 100g caster sugar
- 120g self raising flour
- 1 tbsp custard powder
- 2 large free eggs
- 180 ml whole milk
- 2 drops vanilla extract
- 140g mixed seasonal berries, you can use frozen if you prefer
- Whipped cream and extra berries to serve
Method
- Preheat the oven to 180oC/160oC fan.
- Using about electric mixer combine butter, sugar, flour, custard powder and eggs. Mix for about 2 minutes. Stir in milk and vanilla extract. This can split slightly but don't worry that’s not a problem, it will still work.
- Grease a shallow baking tray and pour in the batter mix and top with the mixed berries. These will sink into the batter mix as it cooks which is perfectly ok.
- Place into the oven and bake for 40 - 45 minutes or until pierced with a skewer and it comes out clean.
- Remove from the oven and allow to cool slightly before serving.
- Serve with whipped cream and extra berries.
